ITALIAN  SPINACH

 

2 lb spinach (washed and stems cut off)

¼ - ½ cup olive oil

2 tbs chopped garlic

2-3 potatoes cut up and boiled in 2 cups water (optional)

2 sticks of pepperoni sliced and lightly browned (optional)

 

Boil spinach in lots of salted boiling water for about 15 min.

Meanwhile, sauté garlic in olive oil until golden.

Remove from heat.

Drain cooked spinach by spooning out of pot with slotted spoon.

Spoon into oil and garlic.

Add a small amount of water from top of spinach pot.

Add boiled potatoes with all the water and/or add the pepperoni.

Boil slowly for about 10 min.

Let stand for about 15 min before serving.
