LITE  DATE-NUT  BREAD

 

2 ½ cup flour

1 ½ cup boiling water

¼ tsp baking pdr

1 cup chopped dates

2 tsp baking soda

¾ cup sugar

½ tsp salt

1 egg  (beaten)

1 cup chopped walnuts

1 tsp vanilla

1 tbs melted margarine

 

Pour boiling water over dates and let stand 10 min.  Make sure cool enough to add to egg without cooking it.

Meanwhile,

Sift flour, baking pdr, baking soda, and salt.  Stir in walnuts and set aside.

 

Add vanilla to egg.

Gradually add sugar to egg while beating with a spoon.

 

Add date mixture alternately with dry ingredients to the egg and sugar mix.

 

Stir in shorting.

 

Pour into a greased and floured pan (10 x 5 x 3)

 

Bake in 3500 F oven for 1 ¼  hour.

(Bake 50 min when using smaller pans dividing batter in half)
